Is Labneh healthy?
Of course Labneh is healthy! But in our Zuivelarij we are mainly concerned with taste. Our Labneh is rich in proteins, fats, minerals and vitamins. For people with lactose intolerance, there is good news: Labneh actually contains little lactose because the milk acidifies almost completely during the production process. And there is even more good news: you can safely eat our Labneh if you are pregnant because the milk is highly pasteurized.
Sheep’s milk
Leen & Gert ‘s sheep’s milk naturally contains many nutrients. Sheep’s milk is more concentrated than cow’s milk with a high fat and protein content but otherwise sheep’s milk is not that much different from cow’s milk.
Ferments
Yogurt ferments are lactic acid bacteria used to convert milk into yogurt. Lactobacillus bulgaricus and Streptococcus thermophilus, ferment milk sugars (lactose) and produce lactic acid.
Cow’s milk powder
In our Dairy, we make each product from a unique farm. Because the composition of the milk depends on many factors we sometimes add more or less skim milk powder. Usually the milk is (too) fatty, so with the skim powder we add mostly protein. This way we get an end product that always tastes about the same.
Salt
Our labneh contains a small amount of salt. Keep that in mind if you want to use it in sweet dishes. Salt gives it a full flavor and a longer shelf life.
Potassium sorbate
Our Labneh contains a small amount of the perfectly safe potassium sorbate. This is a preservative against fungi and yeasts that occurs naturally in rowan berries, among others. Because potassium sorbate works hot well in an acidic environment, we only need to add a small amount for good results.
Source of protein and fats
Even more than yogurt (because it is concentrated!), Labneh is an excellent source of protein and fat. The nutritional value is also in the vitamins and minerals like B12 and Calcium that our Labneh contains. Moreover, our Labneh has less lactose than yogurt because it sours longer. Our Labneh is vegetarian, but not vegan. The milk is “almost cooked” first so you can safely eat labneh if you are pregnant.
When you eat our Labneh with vegetables, fresh herbs and bread, you eat full and healthy meal right away.
