The ricotta we make at De Zuivelarij is the real deal. Or as the Italians say, “Ricottone”. The base is the sweet whey leftover after making Berloumi. The whey is then heated further, and only the finest ricotta that rises to the top is skimmed off. Since the milk in Berlare is the best in the world, there’s still plenty of fats and proteins left in the whey. That’s why our Berloumi Ricotta is both creamy and firm. It’s also fantastic to use in the kitchen for lasagna, bruschetta, pies, … be sure to tr the ricotta gnudi recipe on our website. It’s our favourite!
