We once wanted to market these Berloumi Bacon Bites as a new product and it was quite a success. But for a number of reasons, we had to scrap the plan anyway. We suddenly became a meat processing company and didn’t have time to roll them. So … roll them yourself. Here’s some inspiration.

Berloumi Bacon Bites (sticky) with almond tabouleh

Almond tabouleh (4 people)

Mix 500 grams of shaved cabbageout with a teaspoon of salt and mix well. Keep in the refrigerator for half an hour and then squeeze the water out. Cook 500 grams of cous cous as directed on the package. Put the couscous in a large bowl and loosen the grains with your hands. Meanwhile, add 30 grams of nut oil(or almond oil). Toast 250 grams of almond flakes in the oven or on a pan but do not let them burn. Mix together the couscous, almond flakes and white cabbage. While mixing, also add lemon juice or cider vinegar to taste. You can eat the tabouleh hot, lukewarm or cold.

Roll them yourself.

Cut a package of Berloumi in half lengthwise and then into five pieces. Roll the Berloumi tightly in ten slices of finely cut breakfast bacon with not too much fat. Lay them closed side down until you want to fry them. You can also prepare this the day before.

Baking Berloumi bacon bites.

Fry the bacon bites in a very small amount of oil or in a non-stick pan without oil. Also turn them on their upside down side to fry the Berloumi with them as well to the maximum. At the end, add a tablespoon of cherry jam (or other dark jam) and let it caramelize.

Serve the Berloumi bacon bites warm on top of the almond tabouleh. Spoon the bacon fat and cherry jam on top and finish with a little leftover almonds.

Bake the Berloumi bacon bites on the cheese side as well. That way you get a nice, savory, fried flavor.

You can also bake the bites in a baking tray in the oven but browning will be difficult. Put them in a hot oven.

For a vegetarian solution, you can also wrap the Berloumi pieces in zucchini strands and fry them on the cheese side.

Stick the Berloumi Bacon Bites on a skewer and grill them over high heat on the barbecue. Lacquer them at the end with a little honey, jam, barbecue sauce or sweet soy sauce.

You can very easily fry our Berloumi Bacon Bites on the pan, but just as easily they go in the air fryer or the deep fryer. On the barbecue they are at their tastiest, but that could also be due to the weather.

You can fry the Berloumi Bacon Bites on the pan but also grill them (on the barbecue) or in the airfryer. Fry them until the cheese comes out from between the shrinking bacon.
