En faisant bouillir le lait de ch\u00e8vre, on obtient un caill\u00e9 tr\u00e8s particulier, difficile \u00e0 travailler. Voil\u00e0 notre mani\u00e8re de raccourcir la cha\u00eene. Nous fabriquons notre cacioricotta \u00e0 partir du lait de ch\u00e8vre de la ferme <a href=\"https:\/\/www.klaverlochting.be\/\">Klaverlochting<\/a>.<\/p>\n<\/div><\/div>\n\n<div class=\"wp-block-media-text has-media-on-the-right is-stacked-on-mobile\"><div class=\"wp-block-media-text__content\">\n<h3 class=\"wp-block-heading\" id=\"h-koken\">Bouillir<\/h3>\n\n\n\n<p>La Cacioricotta est fabriqu\u00e9e \u00e0 partir de lait bouilli, ce qui est assez exceptionnel. Il contient \u00e9galement <a href=\"https:\/\/dezuivelarij.be\/wei-eiwitten\/\">les prot\u00e9ines saines du petit-lait de la ricotta<\/a>. <\/p>\n<\/div><\/div>\n\n<div class=\"wp-block-media-text has-media-on-the-right is-stacked-on-mobile\"><div class=\"wp-block-media-text__content\">\n<h3 class=\"wp-block-heading\" id=\"h-vormen\">Moulage<\/h3>\n\n\n\n<p>Nous mettons le caill\u00e9 mou dans les moules \u00e0 fromage. Sa forme n&rsquo;est pas encore d\u00e9finitive, car le fromage est encore retourn\u00e9 une fois dans son moule. Les bact\u00e9ries de notre viVie aiment s&rsquo;y rendre pour s&rsquo;acidifier, ce qui leur conf\u00e8re une saveur merveilleusement aromatique. <\/p>\n<\/div><\/div>\n\n<div class=\"wp-block-media-text has-media-on-the-right is-stacked-on-mobile\"><div class=\"wp-block-media-text__content\">\n<h3 class=\"wp-block-heading\" id=\"h-pekelen\">Saumurage<\/h3>\n\n\n\n<p>Le fromage affin\u00e9 est ensuite plac\u00e9 dans un bain de saumure. En Italie, on mange la cacioricotta tant tr\u00e8s fra\u00eeche et tr\u00e8s fortement s\u00e9ch\u00e9e.
