Peu importe qu&rsquo;il y ait des morceaux plus gros. Le type de biscuits que vous utilisez n&rsquo;a pas non plus d&rsquo;importance.   Tous les biscuits qui sont fermes et qui ressemblent de loin \u00e0 des sp\u00e9culoos sont bons. <\/mark><\/p>\n\n\n\n<p class=\"has-normal-font-size\"><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-black-color\">Tapissez ensuite le fond d&rsquo;un moule \u00e0 charni\u00e8re avec du <strong>papier<\/strong> sulfuris\u00e9 et beurrez ses c\u00f4t\u00e9s avec de la <strong>margarine<\/strong>. <\/mark><\/p>\n\n\n\n<p class=\"has-normal-font-size\"><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-black-color\">Mettez les biscuits \u00e9miett\u00e9s dans le moule et versez <strong>60 g de beurre fondu<\/strong> dessus. M\u00e9langez les biscuits avec le beurre. Tout cela peut se faire dans le moule au lieu de salir d&rsquo;autres pots. Vous pouvez \u00e9ventuellement ajouter quelques \u00e9pices aux biscuits.   <\/mark><\/p>\n\n\n\n<p class=\"has-normal-font-size\"><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-black-color\">Maintenant, tassez le m\u00e9lange de biscuits \u00e0 la main ou avec le fond d&rsquo;un verre. Le fond de biscuits \u00e0 l&rsquo;air assez friable, mais ce n&rsquo;est pas une mauvaise chose. Plus tard, la p\u00e2te \u00e0 g\u00e2teau humidifiera davantage le fond. C&rsquo;est pourquoi nous ajoutons les <strong>\u0153ufs en dernier<\/strong>. <\/mark><\/p>\n\n\n\n<p class=\"has-normal-font-size\"><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-black-color\">Comme notre <strong>ricotta<\/strong> et notre <strong>labneh<\/strong> sont tous deux tr\u00e8s fermes, vous pouvez ajouter beaucoup de jus aromatiques ici. Nous n&rsquo;appr\u00e9cierions pas vraiment, mais si vous optez (\u00e0 vos risques et p\u00e9rils) pour une autre ricotta ou un yaourt grec ou un fromage plat, ajoutez un peu moins de jus de mandarine. <\/mark><\/p>\n\n\n\n<p class=\"has-normal-font-size\"><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-black-color\">Versez la p\u00e2te sur la cro\u00fbte \u00e0 tarte aux biscuits. Elle est assez liquide, il ne faut donc pas la lisser. Pour faire dispara\u00eetre l&rsquo;air, tapez plusieurs fois le moule sur la table. D&rsquo;abord dans un <strong>four chaud<\/strong>, puis \u00e0 <strong>basse temp\u00e9rature<\/strong>. Le bord deviendra alors un peu plus brun et se rel\u00e8vera l\u00e9g\u00e8rement : parfait pour recouvrir ensuite le dessus du cheesecake de mandarines, de myrtilles ou d&rsquo;autres fruits.  <\/mark><\/p>\n\n\n\n<p class=\"has-normal-font-size\"><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-black-color\">Faites chauffer le four \u00e0 sa temp\u00e9rature maximale. Faites cuire le g\u00e2teau pendant environ <strong>10 minutes<\/strong>. Ouvrez ensuite le four et abaissez la temp\u00e9rature \u00e0 110\u00b0C. Ne refermez la porte du four que lorsque la temp\u00e9rature a suffisamment baiss\u00e9. R\u00e9servez les mandarines et \u00e9gouttez-les. Faites bouillir le jus jusqu&rsquo;\u00e0 \u00e9bullition avec <strong>une cuill\u00e8re \u00e0 caf\u00e9 de poivre rose et trois clous de girofle<\/strong>. Vous pouvez ajouter d <strong>&lsquo;autres \u00e9pices<\/strong> si vous le souhaitez. Lorsque le jus a bouilli, laissez la casserole refroidir un peu.
