Sur cette page, nous vous montrons comment est fabriqu\u00e9 un fromage \u00e0 griller. Cliquez <a href=\"https:\/\/berloumi.be\/halloumi-bereiden\">ici<\/a> pour savoir comment le pr\u00e9parer. <\/p>\n\n<p class=\"has-text-align-left has-normal-font-size wp-block-paragraph\">Au d\u00e9but de notre journ\u00e9e, 6 000 litres de lait attendent dans un grand cuve de stockage. Nous avons collect\u00e9 le lait aupr\u00e8s d&rsquo;agriculteurs locaux et nous y avons <a href=\"https:\/\/berloumi.be\/gezond\/\">d\u00e9j\u00e0 ajout\u00e9 quelques \u00e9l\u00e9ments.<\/a> Nous pompons le lait dans une cuve \u00e0 fromage de 1000 litres et le chauffons \u00e0 35\u00b0C. Lorsque le lait est \u00e0 temp\u00e9rature, Delphine ajoute la pr\u00e9sure. N\u00e9anmoins, nous continuons \u00e0 faire des tests tous les jours pour nous en assurer. Et aussi un peu parce que c&rsquo;est obligatoire. Le caill\u00e9 est alors ratiss\u00e9 dans des bacs de pressage. Il faut bien estimer le rendement pour r\u00e9partir les bacs de fa\u00e7on homog\u00e8ne. Le lait est un produit naturel dont certains contiennent plus de mati\u00e8res grasses et de prot\u00e9ines que d&rsquo;autres. C&rsquo;est pourquoi chaque morceau de Berloumi n&rsquo;a pas toujours le m\u00eame poids.    <\/p>\n<\/div>\n<\/div>\n\n<div style=\"height:60px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<h3 class=\"wp-block-heading has-text-align-left\" id=\"h-persen-en-snijden\">Presser et d\u00e9couper<\/h3>\n\n<p class=\"has-text-align-left has-normal-font-size wp-block-paragraph\">Le caill\u00e9 se trouve maintenant dans des bacs perfor\u00e9s. Dans ces bacs, nous pressons des grilles. Il n&rsquo;est pas vraiment visible sur la photo, mais il s&rsquo;agit en fait de 32 colonnes de caill\u00e9 dans un bac. Bogdan respire profond\u00e9ment et coupe les colonnes horizontalement avec un grand couteau. C&rsquo;est le travail le plus intense du processus de production.<\/p>\n\n<div style=\"height:60px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<h3 class=\"wp-block-heading has-text-align-left\" id=\"h-koken\">Bouillir<\/h3>\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<p class=\"has-text-align-left has-normal-font-size wp-block-paragraph\">Pendant la cuisson, le Berloumi acquiert sa texture typique, non fondante. En chauffant le fromage, les prot\u00e9ines se r\u00e9organisent et aucune bact\u00e9rie lactique ne reste dans le fromage. Le Berloumi est d&rsquo;abord plac\u00e9 au r\u00e9frig\u00e9rateur pour une heure suppl\u00e9mentaire. <\/p>\n<\/div>\n<\/div>\n\n<div style=\"height:60px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<h3 class=\"wp-block-heading\" id=\"h-pekelen\">Saumure<\/h3>\n\n<p class=\"has-text-align-left has-normal-font-size wp-block-paragraph\">Le Berloumi refroidi est mis au r\u00e9frig\u00e9rateur pendant une nuit dans un bain de sel. Avant son achat, l&#8217;employ\u00e9 qui devait mettre les pi\u00e8ces en place avait la t\u00e2che la plus difficile. En raison de la forte acidit\u00e9 de ce type de fromage, il est important que l&rsquo;oxyg\u00e8ne ne puisse pas y p\u00e9n\u00e9trer.
