We blanched, cooled and dried each of the vegetables individually and with the utmost care. The dressing is simple and everything can be prepared perfectly in advance. It doesn&#8217;t really matter exactly which vegetables you choose as long as they are green and at their best in the spring. It is equally important to drop them in ice water immediately afterwards. Cold water is also good but not as good. Immediately putting them in ice water fixes the beautiful green color and better preserves the sweet taste.<\/p>\n\n\n\n<p class=\"has-normal-font-size\">Blanch the <strong>broad beans for one minute<\/strong> and then double dip them. Blanch the <strong>French beans for seven minutes<\/strong>, the <strong>corn asparagus for one minute<\/strong> and the <strong>green asparagus for two minutes<\/strong>.<\/p>\n\n\n\n<p class=\"has-normal-font-size\">Immediately scoop the green vegetables into ice water until cooled. Afterwards, drain them well and dry them well in a towel. Drying lettuce is one of <a href=\"https:\/\/berloumi.be\/salade-tips\">our most important salad tips<\/a>.<\/p>\n<\/div>\n<\/div>\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<p class=\"has-normal-font-size\">Make a simple dressing by mixing <strong>one teaspoon of yellow mustard, the juice of half a lemon, pepper and salt<\/strong> <strong>50 grams of olive oil<\/strong>. <\/p>\n\n<p class=\"has-normal-font-size\">Add the well-dried vegetables along with <strong>half a chopped sweet onion<\/strong>, <strong>some<\/strong> <strong>curly endive<\/strong> and <strong>lots of flat parsley leaves<\/strong> to the dressing and mix well.
