Ricotta cookies are an Italian Christmas specialty. But because we have fresh ricotta every day, we just make them every day.<\/p>\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<figure class=\"wp-block-image size-column1-2\/3\"><img data-recalc-dims=\"1\" height=\"760\" width=\"1140\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/berloumi.be\/wp-content\/uploads\/2020\/01\/Ricotta-Koekjes-1140x760.jpg?resize=1140%2C760&#038;ssl=1\" alt=\"ricotta biscuits.\" class=\"wp-image-8483\" \/><\/figure>\n<div style=\"height:30px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<p class=\"has-normal-font-size\">Preheat the oven to 180\u00b0C. Let <strong>230 grams of<\/strong> <strong>butter to<\/strong>soften. Mix the dry ingredients such as <strong>390 gram flour with 6 gram salt, 6 gram baking powder and 1 sachet of vanilla sugar.<\/strong> Mix the butter, which has softened in the meantime, with <strong>360 grams of granulated sugar and whisk one or two tangerines<\/strong> for about 3 minutes. Then add<strong> 2 eggs<\/strong> one by one. Then add the dry ingredients to the batter. Mix it thoroughly together. Add <strong>290 grams<\/strong> of our <a href=\"\/berloumi.be\/ricotta\"><strong>Berloumi ricotta<\/strong><\/a> and mix to a homogeneous batter.<\/p>\n\n<p class=\"has-normal-font-size\">Using a piping bag, spray the batter onto a baking tray lined with baking paper or use an ice cream scoop to distribute the batter. Leave enough room between the piles of ricotta cookies. Bake them for fifteen minutes. Or 20 minutes if you want them harder and drier. Leave the biscuits to cool for another five minutes and, if necessary, decorate with icing.
