Neither bacteria nor enzymes are involved. You could say the cheese closely resembles fresh, pressed <a href=\"https:\/\/berloumi.be\/ricotta-van-berloumi\">ricotta <\/a>made from whole milk. The preparation is also almost identical to the preparation of &#8220;mats&#8221; for mat pies. If you ever want to make your own cheese, paneer is a good start.<\/p>\n\n<p class=\"wp-block-paragraph\">Making paneer is not very difficult. We make <a href=\"https:\/\/dezuivelarij.be\/paneer\/?lang=en\" type=\"page\" id=\"3468\">our paneer<\/a> under very controlled conditions that you can&#8217;t replicate 100% at home. But don&#8217;t worry: we expertly explain it here. If you want to make really good paneer, look for fresh raw milk. If you don&#8217;t, buy whole milk from the store. We begin our adventure with <strong>10 liters of fresh cow&#8217;s milk<\/strong>.   <\/p>\n<\/div>\n<\/div>\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-8f761849 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:33.33%\">\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-de-pot\">The vessel<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Preferably choose a low cooking pot. This will stir more easily. Use a thermometer for this purpose. Afterwards, let the milk cool back to 78\u00b0C.  <\/p>\n<\/div>\n<\/div>\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-8f761849 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:33.33%\">\n<div style=\"height:62px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-toevoegen\">Add<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">We add another <strong>250 grams of skim milk powder<\/strong> to our 10 liters of milk. We add an additional 17 ml because it gives better coagulation, especially in milk that has been kept cold for a long time. If you can&#8217;t find calcium chloride leave it out. <\/p>\n<\/div>\n<\/div>\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-8f761849 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:33.33%\">\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-voorbereiden\">Preparations<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">To curdle the milk at 78\u00b0 we add <strong>15 grams of citric acid<\/strong>. We dissolve the citric acid in 1.5 liters of water. It is important to heat this water + citric acid also to about 70\u00b0C.
