This type of cheese was &#8211; and still is &#8211; especially popular in regions such as the Middle East. That&#8217;s because keeping food cool has long been a problem in hot regions. <strong>Cooking<\/strong> the curds and brining the cheese ensures a long shelf life. The fact that the cheese doesn&#8217;t melt is an advantage in our modern kitchen where these cheeses can serve as a meat substitute. Since the 1990s, grilling cheeses, and especially halloumi, has also become more well-known in Anglo-Saxon countries and Europe. <\/mark><\/p>\n\n<div style=\"height:70px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<div class=\"wp-block-button aligncenter is-style-outline is-style-outline--1\"><a class=\"wp-block-button__link has-text-color wp-element-button\" href=\"https:\/\/berloumi.be\/where-to-buy-halloumi\/?lang=en\" style=\"color:#b5c200\">Where to buy our Berloumi?<\/a><\/div>\n\n<div style=\"height:70px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<h2 class=\"wp-block-heading\" id=\"h-verschillende-soorten-kaas-om-te-grillen\"><strong>Different types of grill-able cheeses.<\/strong><\/h2>\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<h3 class=\"wp-block-heading has-text-align-left\" id=\"h-halloumi\"><strong>Halloumi<\/strong><\/h3>\n\n<p class=\"has-normal-font-size wp-block-paragraph\"><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-black-color\">The <strong>Cypriot halloumi <\/strong>(or hellim in Turkey) is by far the best known grill cheese. The name halloumi dates back to the Egyptian &#8220;Hallum. The name refers to a cheese already eaten in <strong>medieval Egypt<\/strong>.<\/mark><\/p>\n\n<div style=\"height:70px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n<div class=\"wp-block-image is-style-default\">\n<figure class=\"aligncenter size-column3-1\/1\"><img decoding=\"async\" src=\"https:\/\/berloumi.be\/wp-content\/uploads\/2023\/01\/Halloumi-BBC-Good-Food-380x350.jpg\" alt=\"\" class=\"wp-image-16018\"\/><figcaption class=\"wp-element-caption\">Photo: BBC Good Food<\/figcaption><\/figure>\n<\/div>\n<div style=\"height:70px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<p class=\"has-normal-font-size wp-block-paragraph\"><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-black-color\">On July 17, 2014, both the Turkish and Greek parts of Cyprus applied to have the designation of the cheese recognized as a European designation of origin. The EU supported that application. <\/mark> because it could unify the island. <mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-black-color\">Finally<\/mark>, after much disagreement among Cypriot producers and farmers, the designation of origin was granted in 2021. Only Halloumi produced in Cyprus may now use the designation Halloumi. <\/p>\n\n<p class=\"has-normal-font-size wp-block-paragraph\">According to the denomination of origin, there may be a maximum of 49% cow&#8217;s milk in the cheese but this rule has since been severely watered down. Today (2023) most of the Halloumi being made contains only 20% goat and sheep milk. <\/p>\n\n<p class=\"wp-block-paragraph\">In the our <a href=\"https:\/\/dezuivelarij.be\">Zuivelarij<\/a> we do not understand this designation of origin. Halloumi is not a region but a type of cheese manufactured throughout the world. Cyprus may be the main Halloumi producing country in the world, but the history of Halloumi does not lie in Cyprus. Cyprus also has no specific climate or other key geographical features. Much more logical, fairer and by analogy with, say, Camembert de Normandie, would have been to protect<strong>&#8220;Cypriot<\/strong> Halloumi.<\/p>\n\n<div style=\"height:70px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<h3 class=\"wp-block-heading has-text-align-left\" id=\"h-nabulsi\"><strong>Nabulsi<\/strong><\/h3>\n\n<p class=\"has-normal-font-size wp-block-paragraph\"><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-black-color\"><strong>Nabulsi<\/strong> is a cooked and pickled cheese from Palestine. Known in the wider region, the cheese originated in Nablus. Black cumin and mastic provide the aroma of the cheese. Nabulsi is eaten either cold or hot. In the Palestinian dish<strong>&#8220;knafeh<\/strong>,&#8221; you use a modified version of the cheese. The cheese is then more aged and more like mozzarella. In that form, you normally don&#8217;t eat the cheese grilled.<\/mark><\/p>\n\n<div style=\"height:70px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter is-resized\"><img decoding=\"async\" src=\"https:\/\/berloumi.be\/wp-content\/uploads\/2019\/11\/Nabulsi-Cheese.jpg\" alt=\"\" class=\"wp-image-7830\" style=\"width:400px\"\/><\/figure>\n<\/div>\n<div style=\"height:70px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<h3 class=\"wp-block-heading has-text-align-left\" id=\"h-cheese-curd-of-squeaky-cheese\"><strong>Cheese curds or squeaky cheese<\/strong><\/h3>\n\n<p class=\"has-text-color has-normal-font-size wp-block-paragraph\" style=\"color:#b5c200\"><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-black-color\">In <strong>Canada<\/strong> and the northern <strong>United<\/strong> <strong>States<\/strong>, you often eat fresh curd<\/mark><a href=\"https:\/\/berloumi.be\/fries\/?lang=en\"><mark style=\"background-color:rgba(0, 0, 0, 0);color:#b5c200\" class=\"has-inline-color\">fried<\/mark><\/a><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-black-color\">. You cut the curd into irregular pieces. Sometimes the cheese is passed through a savory fritter batter.  In Canada, they use these <strong>cheese curds<\/strong> in<strong>&#8220;poutine<\/strong>. That&#8217;s a local dish. Poutine consists of French fries and fried cheese. This is all topped with a stew-like meat sauce. In Wisconsin, they put the cheese through a batter for frying. You can often find this snack at festivals and fairs. Cheese curds are at best when they are very fresh. They have a remarkable mouth-feel and squeak when you bite down on them. Hence the name<strong>&#8220;sqeaky cheese<\/strong>. <\/mark><\/p>\n\n<div style=\"height:70px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter is-resized\"><img decoding=\"async\" src=\"https:\/\/berloumi.be\/wp-content\/uploads\/2016\/12\/cheese-curds-1024x682.jpg\" alt=\"Cheese, curds, squeaky\" class=\"wp-image-1974\" style=\"width:400px;height:303px\"\/><\/figure>\n<\/div>\n<div style=\"height:70px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<h3 class=\"wp-block-heading\" id=\"h-leipajuusto\"><strong>Leip\u00e4juusto<\/strong><\/h3>\n\n<p class=\"has-normal-font-size wp-block-paragraph\"><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-black-color\"><strong>Leip\u00e4juusto<\/strong> comes from northern Finland. It literally means<strong>&#8220;bread cheese<\/strong>. The cheese is traditionally made with the very fat colostrum milk of newly calved cows. Then again, commercial cheeses are simply made from cow&#8217;s milk. Unlike other grilling cheeses, leip\u00e4juusto is not &#8220;re-cooked. It is baked or grilled in the oven. Then the cheese is dried slightly to very hard. Because these highly dehydrated cheeses are bone hard, you have to warm them up before eating. <\/mark><\/p>\n\n<p class=\"has-normal-font-size wp-block-paragraph\"><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-black-color\">Leip\u00e4juusto is often eaten with <strong>berries<\/strong>, and topped with <strong>coffee<\/strong>. Sometimes they also pour cream on top and then the cheese is heated in the oven.<\/mark><\/p>\n\n<div style=\"height:70px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n<div class=\"wp-block-image is-resized size-large\">\n<figure class=\"aligncenter\"><img decoding=\"async\" src=\"https:\/\/berloumi.be\/wp-content\/uploads\/2019\/09\/leipajuusto-smaller-768x512.jpg\" alt=\"\" class=\"wp-image-7092\"\/><figcaption class=\"wp-element-caption\">Oven-baked leip\u00e4juusto with blueberries<\/figcaption><\/figure>\n<\/div>\n<div style=\"height:70px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<h3 class=\"wp-block-heading has-text-align-left\" id=\"h-paneer-of-panir\"><strong>Paneer or panir<\/strong><\/h3>\n\n<p class=\"has-normal-font-size wp-block-paragraph\"><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-black-color\">Paneer or panir comes from <strong>India<\/strong> and the surrounding area. <\/mark> <a href=\"http:\/\/www.berloumi.be\/kaas-maken\"><mark style=\"background-color:rgba(0, 0, 0, 0);color:#b5c200\" class=\"has-inline-color\">It&#8217;s made in a very different way<\/mark><\/a> <mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-black-color\">than most cheeses. The cheese most closely resembles a <strong>fresh, pressed ricotta<\/strong> made from whole milk.  First you heat milk strongly, to more than 90\u00b0C. Then cool it slightly and curdle it with lemon juice, vinegar or another acid. So there are no bacteria or enzymes involved. Here, the whey protein that are lost in most cheeses will stay in the cheese. As a result, paneer always remains <strong>fairly moist<\/strong>. Paneer has a short shelf life but you can very easily make the cheese yourself! Check out  <\/mark> <a href=\"https:\/\/www.youtube.com\/watch?v=krPDauMJgLE\"><mark style=\"background-color:rgba(0, 0, 0, 0);color:#b5c200\" class=\"has-inline-color\">this video<\/mark><\/a><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-black-color\">.<\/mark><\/p>\n\n<p class=\"has-normal-font-size wp-block-paragraph\"><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-black-color\">Paneer is usually cut into cubes for frying or baking. Then he ends up in a <strong>curry<\/strong>. The most famous preparation is<strong>&#8220;saag paneer<\/strong>. That&#8217;s a recipe with spinach. In most dishes, you can certainly alternate paneer with <\/mark><a href=\"http:\/\/berloumi.be\"><mark style=\"background-color:rgba(0, 0, 0, 0);color:#b5c200\" class=\"has-inline-color\">Berloumi<\/mark><\/a><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-black-color\">. The most famous is probably &#8220;saag paneer,&#8221; a preparation with spinach. In most recipes, Paneer is interchangeable with Berloumi.<\/mark><\/p>\n\n<div style=\"height:70px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-column3-1\/1\"><a href=\"https:\/\/www.bbcgoodfood.com\/recipes\/saag-paneer\"><img decoding=\"async\" src=\"https:\/\/berloumi.be\/wp-content\/uploads\/2016\/12\/saag-paneer-380x380.jpg\" alt=\"paneer, grilling cheese\" class=\"wp-image-2089\"\/><\/a><figcaption class=\"wp-element-caption\">Saag paneer, a classic of Indian cuisine<br\/>Photo: <a href=\"https:\/\/www.bbcgoodfood.com\/recipes\/saag-paneer\">BBC Good Food<\/a><\/figcaption><\/figure>\n<\/div>\n<div style=\"height:70px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<h3 class=\"wp-block-heading has-text-align-left\" id=\"h-queijo-coalho\"><strong>Queijo coalho<\/strong><\/h3>\n\n<p class=\"has-normal-font-size wp-block-paragraph\"><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-black-color\">Queijo coalho is a fresh <strong>Brazilian grilling cheese<\/strong>. You often find it on the beach, where they grill it as a kebab. In terms of manufacturing, the cheese is very similar to a <strong>mixture<\/strong> of halloumi and mozzarella. The milk is not soured, but the curd is usually slightly heated. Coalho you usually eat very fresh.<\/mark><\/p>\n\n<div style=\"height:70px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-column3-1\/1\"><img decoding=\"async\" src=\"https:\/\/berloumi.be\/wp-content\/uploads\/2023\/01\/Coalho-380x380.webp\" alt=\"\" class=\"wp-image-16024\"\/><figcaption class=\"wp-element-caption\">Photo: Cidade Can\u00e7ao<\/figcaption><\/figure>\n<\/div>\n<div style=\"height:70px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<h3 class=\"wp-block-heading has-text-align-left\" id=\"h-provolone-of-provoleta\"><strong>Provolone or Provoleta <\/strong><\/h3>\n\n<p class=\"has-normal-font-size wp-block-paragraph\"><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-black-color\">Provoleta is the <strong>Argentine version<\/strong> of the Italian provolone. Italian provolone is an aged<strong>&#8220;pasta filata<\/strong>. It is the style of cheese that includes mozzarella and pizza cheese. Provoleta is traditionally grilled on the <strong>asado<\/strong>. That&#8217;s a low Argentine barbecue. Provolone, unlike Berloumi and halloumi, does melt a bit. The trick is to let the cheese come to room temperature. Then the outside dries slightly. Then rub it with oil and grill it over a high heat. Scamorza and Caciocavallo also belong to the same cheese type.<\/mark><\/p>\n\n<div style=\"height:70px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-column3-1\/1\"><img decoding=\"async\" src=\"https:\/\/berloumi.be\/wp-content\/uploads\/2023\/01\/provoleta-parrilla-380x380.webp\" alt=\"provoleta grilling cheese&#10;\" class=\"wp-image-16028\"\/><figcaption class=\"wp-element-caption\">Photo: Minutundo<\/figcaption><\/figure>\n<\/div>\n<div style=\"height:70px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<h3 class=\"wp-block-heading\" id=\"h-saganaki\">Saganaki<\/h3>\n\n<p class=\"wp-block-paragraph\">Saganaki is not really a grilling cheese but rather a reference to the typical Saganaki pan in which non-melting cheeses are often baked. The cheeses that go into it are traditionally kefalotyri, kefalograviera and kasseri. But you can also put our Berloumi in the saganaki. The cheese fried in the saganaki pan is often flamb\u00e9ed and then quenched with lemon juice. But this custom is more in use in Greek restaurants outside Greece.
